Agreste differs only slightly in production from the Plateado, but results in a greatly different flavor. For Agreste, the jimador leaves 1/2" more verde (the green part) on the agave at harvest than the Plateado, adding more distinct agave flavor in the resulting distillate. The result is a bittersweet spirit with salty hints and herb esssence that reflects the true organoleptic flavors of the Andean terroir. 45% ABV (90 proof).
