Bozal Borrego is a limited release. This mezcal is made with wild maguey Castilla, which is a close relative to maguey Espadin. Similar to a Pechuga, during the second distillation, a leg of lamb, in addition to seasonal wild fruits and grains harvested from the local market, are suspended inside the bottom of the still in a basket. These wild fruits include strawberries, apples and pineapple, while additional ingredients consist of pecans and ginger. This mezcal is heavily viscous. It is fruity, but balanced with notes of citrus and finish of smoked lamb.
Aromas frequently highlight lime, pineapple, savory meat, and sometimes mineral or spice. On the palate, common flavors are cinnamon, pepper, smoked notes, citrus, and savory elements, often with herbal, vanilla, or mineral accents. The spirit is noted for its viscous and smooth mouthfeel. Overall, it is generally regarded as a well-balanced, unique, and enjoyable drink.
