The 2023 Château d’Epiré Savennières continues the estate's tradition of producing "old school," bone-dry Chenin Blanc from their historic blue schist soils. Very dry and high-toned. Expect a "crunchier" acidity compared to the 2022, with a focus on citrus zest, white ginger, and intense crushed-stone minerality. Notes of quince, lemon peel, and white flowers, with a distinct "wet wool" or flinty character that develops with air. Precise and lean. It has a salty, savory finish typical of the Savennières schist, making it an excellent food wine, and would perfectly suit many preparations of seafood, sushi & sashimi, poultry, veal picata, and spicy Thai or Vietnamese food.
