Rolling Fork Pampas Zorro Rum

Pampas Zorro is named after the national animal of Paraguay, where this overproof 100% cane juice rum is produced. Legado Distillery is part of the OTISA organic sugar mill in Arroyos y Esteros region of Paraguay and sources sugar cane from over 800 small farmers of local sugar cane varieties. The fertile soils of the region impart a rich minerality to this rum. True to the local focus of this rum, fermentation is performed with a local yeast traditionally used for baking in native open air hardwood tanks at ambient conditions for a period of up to 15 days.

Bright citrus and tropical fruit with hints of herbal sweetness. Tropical fruit notes and citrus lead the way, with earthy undertones and herbal freshness taking over in the mid-palate. The finish lingers with tropical fruit and a touch of herbal freshness.
