Pirouette is made with high malic acid apples. It is very dry with no residual sugar and, while tart, is light on the palate. Pirouette is refreshing anytime and delicious with food, such as aged Parmesan or Gouda, nuts, and other fatty foods. All of our ciders are made using a secondary in bottle fermentation, resulting in a pleasing natural carbonation. Pirouette’s only ingredients are fermented apple juice and Champagne yeast. There is no juice concentrate, forced CO2, pasteurization, or added sugar. Pirouette is best served chilled in a white wine glass or Breton cider cup. Pirouette was awarded a bronze medal at the 2019 GLINTCAP competition. Because at that time String Theory was not yet in business, it competed in the non-commercial class. GLINTCAP is an international competition that attracts ciders from around the world.
