The house style prioritizes intensity of flavor and elegance, but retains exquisite balance nonetheless. The spectacular "Red Label" Yamahai is fermented with ambient yeast unique to the Kinoshita Brewery and is never filtered or diluted. Woody, earthy, honey tea, citrus peel, and horse saddle aromas on the nose. Deep earthy flavors; deep dark chocolate to dandelion greens and from honey nut to chicory. There is a roasted component that tastes slightly woody like a cask aged sake. Lots of umami in this beast and it does much better room temperature and slightly warmed.
Extremely food friendly and will pair with most things, but does particularly well with intensely flavored foods like grilled spiced meats and funky cheeses.
